I actually made these the other week but what with my father being taken into hospital (he's home now and recovering thankfully) I didn't get a chance to post this sweet lemony treat.
I am very much the sort of gal who likes a list so give me a recipe and I'll produce something fairly similar to the picture. The downside is I have a huge folder of recipes photocopied, scanned and cut out from magazines, books and websites - a large amount of which I never get round to actually baking.
So when I spotted a small bag of lemons reduced to 25p in Tesco, the obvious destination was going to be one of my favourite types of cake - Lemon Drizzle Cake
This recipe is from the BBC Good Food Magazine and can be found on their website.
Little Lemon-tons
175g butter, softened
140g caster sugar
140g self-raising flour
50g ground almonds
½ tsp baking powder
2 large eggs
1 tsp vanilla extract
juice of 3 lemons, zest of 2
200g granulated sugar
This is the sort of recipe I like - just bung all the ingredients in a bowl, mix it up and chuck it in the oven.
30 minutes later and voila!
Admittedly I think I may have opened the oven door a tad too early and it sunk a tiny bit in the middle. Who cares though, it still tasted fine!
Once you've cut the cake into squares, you very quickly dip each one in lemon juice and sugar. These were the bits that didn't quite make it...
And these were the ones that did...
What a shame nobody popped round to see us that weekend - and we just had to eat them all ourselves..well, they wouldn't have kept, would they?
